Zucchini Bread

¼ tsp. Nutmeg

1 Cup Oil

2 Cups Shredded Zucchini

2 Cups Sugar

1 Cup Chopped Nuts

2 tsp. Vanilla

8 ¼ Oz Can Crushed Pineapple

1 ½ tsp Cinnamon

3 Cups Flour

2 tsp. Baking Soda

1 tsp Salt

¼ tsp. Baking Powder



Mix Eggs, Oil, Sugar and Vanilla in large bowl with an Electric mixer until blended.  Add dry ingredients, mix well by hand.  Add Zucchini, Nuts, Pineapple and Raisons (Also by hand).


Grease and lightly flour two loaf pans.  Pour ½ of the batter into each pan.  Bake at 350 degrees or until toothpick inserted in center comes out clean.
